The best miles deal out of SLC (and actually it works flying out of ANY city in the US!) is 15,000 Citi Thank you points on United booked this way (or just 25,000 in first class).  For this you would need a Citi Credit card and points.

Another great deal is 25,000 miles flying on alaska airlines out of SLC (booked through brittish airways).  Alaska Airlines will sell you the exact same ticket for more miles (35K), so that is why you need to book this flight with British Airways (which means you need British Airways miles - you can get these by applying for a British Airways credit card or by transferring Chase or Amex points to a British Airways account).

You can also check southwest to see how much their miles tickets are going for, they only release these 3 months before departure.

Sky miles DELTA deals to Hawaii have been popping up lately so watch for those too.  Mid march of 2019 Delta did a sale out of SLC for 33,000 miles and it even worked mid way through spring break week.  This was about as good as it got (before Covid), now I'm seeing deals to Hawaii during spring and summer dates for 23k!!!  I am also seeing Christmas break available for 31K miles.

This Website explains the Alaska Airlines companion fare.  I was really excited about the companion pass that Alaska Airlines offers since it allows you to use it on flights to Hawaii (Delta's companion ticket doesn't allow you to use it to Hawaii).  However once I got the card and was able to search dates and prices, the best I could find was $400 flights in the summertime (which is pretty good) and $500 flights during Christmas break (which is a great deal).  Basically this card is ONLY good if you are taking a large family to Hawaii for Christmas, otherwise you can find sales throughout the year and even summertime that will be about the same as the alaska companion ticket.  I assume the same is true if you are flying to Cancun or somewhere else in Mexico, great during Christmas break but otherwise not really that great.

For Hotels on points there are too many options to list (which is a good thing!).
